Menu planning is essential when it comes to RV'ing. There is limited room in the pantry and fridge. Not to mention we will need to purchase everything since the RV will have nothing.
First we must purchase staples, which are things like condiments and spices.
Sugar
Salt
Pepper
Mayo
Mustard
Ketchup
Soy sauce
Garlic powder
Onion powder
Oregano
Basil
Red pepper flakes
Breakfast
We plan on keeping it simple for breakfast. Eggs, cereal and pancakes will be a go to, along with oatmeal. We'll need lots of carbs for energy to get us amped up for our hikes.
Lunch
We plan on bringing our lunches on our hikes every day. My husband and I are planning on eating PB&J sandwiches, and the kids will have turkey and ham sandwiches. We'll bring some granola bars and other snacks for us to munch on as well. We'll be hiking for hours and we'll need something to keep us going.
Dinner
Because we are RVing, we plan on taking advantage of our surroundings and will be cooking over campfire for our dinners. Foil packet meals, grilling and easy heat up meals will be our go-to's. This may be tricky as our kids all like to eat different things. But my goal is to be out in nature as much as we can. And that means cooking and eating in it.
What all that boils down to is I need to come up with items where I can overlap ingredients. That way I can cut down on how much we are buying and storing in the RV. Wish me luck!
Dinner Menu Ideas (this may or may not be what we actually eat but it's a good start)
Chili
Burritos
Spaghetti and meatballs
Meatball subs
French bread pizza
Nachos
Chik'n patties (these are vegan and all my kiddos love them)
Grilled cheese sandwiches
Chicken and rice
Beans and rice
Mac-n-cheese
Quesadillas
